What’s Really in Supermarket Meat? Hidden Ingredients You Need to Know

What looks like fresh meat may contain more than you expect.

 

When you stand in front of a supermarket meat counter, the choice can seem simple: pick the cut that looks fresh, check the price and take it home. But the appearance of meat does not always tell the whole story. Processing, packaging and labeling can all affect what consumers are actually buying.

Some meat and poultry products can contain ingredients or added substances used to preserve freshness, improve texture, maintain moisture or enhance flavor. In the United States, ingredients on meat and poultry products generally have to be listed on the label in descending order by weight.

That makes the label one of the most useful tools shoppers have.

Water and Moisture

One detail that can surprise shoppers is water. Meat and poultry can naturally contain moisture, but processing may also result in retained or absorbed water. When applicable, USDA guidance requires the amount of retained water to be identified on the label.

This does not automatically mean the product is unsafe or poor quality. Instead, it means consumers should compare similar products carefully and understand exactly what the package says.
