Step-by-step instructions for making flourless vanilla oatmeal pancakes.
1: Mix the batter.
Place the ripe banana, eggs, rolled oats, baking powder, vanilla extract, and salt in a blender.
Blend on high speed for 30 seconds, until the batter is smooth and slightly thick.

Step 2: Let
the batter rest for 2-3 minutes while the pan heats. The oats will absorb the liquid and the mixture will thicken slightly.

3: Preheat a pan.
Preheat a non-stick pan or griddle over medium heat.
If necessary, lightly grease the surface with a few drops of oil or butter and spread the batter evenly using a paper towel.

Step 4: Fill and shape.
Spoon small balls of batter onto the heated pan. I usually use two spoons per pancake to make it easier to flip. If necessary, gently spread the batter with the back of a spoon, forming a circle.

5: Cook and flip.
Cook the pancakes for about 2-3 minutes on each side. Bubbles will appear on the surface and the edges will harden.

Carefully flip and cook for another 2 minutes, until golden brown and fully cooked.

6. Serve and enjoy!
Serve warm with toppings like fresh fruit, maple syrup, peanut butter, or a dollop of yogurt.
