Chocolate soufflé

How to make a chocolate soufflé:
1. Grease the soufflé dishes with butter, then sprinkle them with sugar, spreading it evenly and tapping out any excess.
2. Melt the chocolate and butter together in a double boiler until smooth.
3. In a small saucepan, melt the butter, add the flour, and stir for one minute.
4. Gradually add the milk, stirring until the mixture thickens and becomes smooth.
5. Combine the milk mixture with the chocolate, then add the egg yolks and salt and stir well.
6. Beat the egg whites with the cream of tartar until they begin to thicken, then gradually add the sugar until stiff peaks form.
7. Fold a portion of the egg whites into the chocolate mixture to loosen the mixture, then fold in the remaining egg whites.
8. Pour the mixture into the molds and bake in a preheated oven at 190 degrees Celsius for 12–15 minutes until the soufflé has risen.
9. Serve immediately while hot and risen.
